For many months I have been on a quest for the perfect shortbread recipe. You would think it would be pretty easy to make this simple cookie, but no….All i ever wanted was a soft and crumbly cookie with that rich yet light buttery flavor. Somewhere deep in my heart I believe the downfall of these cookies lies in my refusal to use real butter. What can I say??? I like to keep it parve ya’ll ….Anyways to make a 25 recipe long story short, I finally hit on a cookie with the perfect flavor, but a deep lackage in texture… Soon after, I baked this here recipe which has that texture i have been longing for , but not the precise flavor I pine for….
Without further ado
Kinda Bland, Good Mouth Feel Cookies
Preheat oven to 325
The Ingredients:
1 cup margarine
1 1/2 cup flour
1/2 cup icing sugar
1 generous splash of vanilla
1 generous splash of almond extract
1/2 cup chopped pecans

Place all ingredients in bowl of choice

Mix it up and add nuts
- Bake in an ungreased pan for 17-20 minutes till lightly golden.
So there you have it folks! They ain’t pretty, and they don’t taste that great.
Curiously, within an hour of baking, they were nowhere to be found………
